executive chef
The Executive chef is the team leader of the galley team and is responsible for all galley operations on board their assigned vessels.
The executive chef must ensure the efficient operations of all food production areas by consistently analyzing food production quality and costs, adhering to the budget, and monitoring time management for the delivery of exceptional food products to all guest which are produced in full compliance with the specifications, quality and operational procedures of the company.
Qualifications, Experiences & Core Competencies Required
- Minimum of 5 years of work experience in a similar role in a 4-star or 5-star hotel or cruise ship.
- Professional Chef diploma from an accredited culinary school
- Strong knowledge of kitchen management, food preparation, and presentation.
- Excellent understanding of HACCP standards and health and safety regulations.
- Proven experience in staff supervision, training, and team motivation.
- Experience with inventory management and budget control.
- Excellent communication skills in English and/or German.
- Ability to cater to special dietary needs.
- Proven ability to manage costs and minimize waste.
- Ability to handle high-pressure situations calmly.
